Honeyed Butterfly Bramble
Zodiac’s latest bespoke cocktail for Avenues’ readers is the Honeyed Butterfly Bramble, a cross between the classic Aviation and Bramble cocktails that’s perfect for sipping on a summer’s eve. Taking a nod to Zodiac’s Asian influence, Butterfly Pea Flower tea is used to give it a distinctive taste. Combine this with gin, Crème de Violette, Crème de Mure, fresh lemon, honey, and ice, and garnish with a mānuka flower.
Ingredients
60mls 5-10 minute steeped Butterfly Peaflower Tea
40mls Roku Gin
10mls Crème de Violette
10mls Crème de Mure Squeeze of fresh lemon (for acidity and colour change)
Honey
Crushed ice
Manuka flower
Method
Infuse the tea with hot water and let sit for 5-10 minutes. (A shorter steeping time will produce a lighter shade of blue with a clearer colour change from the fresh lemon.) Once sufficiently infused to one’s liking, strain the tea off and hold aside to cool down.
Chill a tumbler glass in the fridge, then add two teaspoons of honey to the bottom of the glass.
Crush ice and fill the glass to the top.
Combine the gin, crème de violette, and a single teaspoon of honey in a mixing vessel and stir down, incorporating the honey into the mixture. Once fully incorporated, pour over the ice.
Use the remaining crushed ice to lightly top the drink, then pour the crème de Mure directly over the ice cap. Squeeze fresh lemon over and down the inside edges of the glass.
Garnish with sprigs of Manuka flower and/or fresh blackberry.
