Ingredients

-45 mls Hendricks Gin

-45 mls fresh beetroot juice

-10 mls lemon juice

-10 mls sugar syrup

-fresh cucumber

-soda water

 Method

Ice down a high-volume glass (400-500 mls). Combine all components in a shaker tin. Once sufficiently chilled, remove the ice from the glass. Peel a long length of cucumber and wrap around the inside rim of the glass. Shake the gin, beetroot, lemon, and sugar and strain into the bottom of the glass. Fill the glass back up with ice and top with soda water. Garnish with a slice of cucumber and fresh beetroot or mint crown for added aromatics.
